Spinach, Leek, Garlic, and Feta Puff Pastry
I struggle with eating vegetables. They’re just not that appealing.
So I found a cookbook with really simple ways to eat your veggies, Eat Your Greens. This book is great for those of us who want ways to mask the taste of certain (or most) vegetables.
There are many ways to cook spinach, and I found one that I can tolerate in this book!
Throw it together with garlic, leeks, feta, and puff pastry, and you’ve got a simple, easy, and quick meal in no time.

Spinach, Leek, Garlic, and Feta Puff Pastry

Equipment list:
Knife and cutting board
Cast iron skillet or other frying pan
Spatula (that’s safe for your pan and won’t scratch it!)
Tablespoon (optional)
Cookie/baking sheet
Stovetop
Ingredients:
Bag of spinach, baby or regular, sliced into strips
2 leeks, white and light green parts ONLY, sliced or diced however you like
1/2 container feta cheese, or more/less based on your preference
2 cloves garlic, diced or minced (can use a spoonful of pre-minced)
1 sheet of puff pastry, thawed
Olive oil, about 1 tablespoon or enough to coat the bottom of your pan OR use enough broth to cover the bottom of the pan
Salt and pepper, to taste
Cooking steps:
Gather all your equipment and ingredients. Preheat the oven to 400F. Slice the spinach into strips. Thoroughly wash your leeks, cutting off the green parts (saving them for broth!) and slicing and dicing the light green and white parts only. Mince or dice the garlic.
Pre-heat 1 tablespoon oil or broth (enough to coat the bottom of the pan) in a frying pan.
Combine spinach and leeks and sauté until fully cooked. Leeks should be as soft as you like, and the spinach as wilted as you want. Season with salt and pepper.
TIP: If you’re hesitant to freely season, taste a bit as you go to make sure your mixture of salt and pepper is how you like it.
TIP 2: While the spinach and leeks cook, get out your cookie/baking sheet, lightly oil it, and unfold the puff pastry sheet on it. We’ll let it sit at room temperature for a few minutes.
Once the spinach and leeks are done, sauté the garlic in the pan for a minute.
Let the spinach, leek, and garlic mixture cool for a few minutes while you grab the cookie/baking sheet with puff pastry.
Spread evenly over the top of the puff pastry the feta cheese.
Spread evenly over the top of the puff pastry and feta cheese the spinach mixture.
Fold the corners of the puff pastry into the middle to form an almost diamond shape.
Pinch the edges together to create a seal.
TIP: Complete steps 6-9 on the cookie/baking sheet! It will be so much easier if you do.
Baking at 400F for 10-15 minutes, until the puff pastry is golden brown on top.
Let cool for 5-10 minutes before slicing, and serve warm by itself or with a salad, pasta, bread, etc.
